Palomo Espadín is the house joven mezcal made from mature espadín agaves baked underground in an earth-and-stone oven, milled by horse-drawn tahona, naturally fermented in wooden tinas, and double-distilled in copper pot stills. Official brand text says proof is adjusted using the master mezcalero’s cordon cerrado technique. This is the cleanest expression of the Palomo range and the best entry point for the brand’s production style.
