Born of a passion for craft and cultural legacy, Dady’O is produced using traditional techniques at every step of its creation. Mature agave piñas are hand-selected and roasted slowly in earthen pits layered with oak and pine — a process that caramelizes sugars and introduces a gentle hint of smoke without overwhelming the agave’s natural character.
After roasting, the agave is crushed with a traditional tahona wheel, preserving sweetness and body. Fermentation takes place in open wooden vats with wild yeast and nutrient-rich water, guided by artisanal intuition rather than shortcuts. Finally, the mezcal is double-distilled in copper pot stills to refine flavor while keeping the spirit’s signature agave purity.
